Very Veggie Sandwich

You know sometimes, when the weather outside is perfect and you have an easygoing day, all you want to do is sit outside and eat an awesome sandwich with a side of chips? This recipe is made for just that kind of day. For me, it’s the kind I want to eat on my back patio while my kids have a water fight in the grass and Jack Johnson is playing in the background… I dream.

Very Veggie Sandwich

Very Veggie Sandwich


  • 6 slices sprouted bread
  • 1 avocado
  • sunflower kernels
  • 1 cucumber
  • 2-4 Tbs hummus
  • 1 garden tomato
  • 1/4 red onion
  • 2 slices havarti cheese (optional)
  • handful alfalfa sprouts
  • fresh baby spinach
  • mayo
  1. The trick here is using hummus and smashed avocado as paste to hold the veggies in place. Start with your bottom piece of bread and slather on some smashed avocado. Top with a sprinkle of sunflower kernels and sliced cucumber.
  2. Add another slice of bread, this time slathered with hummus. Top with sliced tomato, sliced red onion, cheese, sprouts and spinach.
  3. For the finishing touch, spread top slice of bread with mayo of choice (I like Avocado Mayo). Top the sandwich and serve! It looks impressive but it's not easy to eat so be sure to serve with napkins on the side!
